A natural freshness emerges with crushed spearmint leaves, releasing an effervescence as they are smashed between the fingers and muddled into cocktails. Flashes of lime and pineapple sweep through, while splashes of rum and simple syrup add a boozy sweetness that enlivens the crisp vegetal edges.
